Here is your favorite vegan and gluten free lasagna! You must be thinking, "how can a pasta dish be gluten free?!" Remember, this is a variation of your traditional lasagna. In place of the pasta are layers of vegetables. This does not necessarily mean this dish is "low carb". Sweet potatoes are an excellent source of carbohydrate, full of fiber, and rich in an antioxidant called "beta carotene." This dish can be very filling due to its high fiber content.
Don't get me wrong, I do love a good pasta dish, but the layered vegetables in this comfort dish offers so much more flavor and texture!


So how does this lasagna contain "cheese"? A couple of surprises. The ricotta cheese is made from tofu. Yup! You don't even taste the tofu when it is mixed in with the marinara sauce and layered vegetables. Tofu is a great plant-based protein source and high in calcium. The "parmesan cheese" topping is made of cashews. Very simple and wholesome ingredients! To give the ricotta cheese and parmesan cheese their "cheesy" taste is nutritional yeast. Nutritional yeast is an excellent source of vitamin B12, a vitamin that is often lacking in the vegan diet.
This yummy comfort food is a great dish to make for a dinner party or to meal prep and have as leftovers for the rest of the week! Easy to prep with simple ingredients that tastes great :)
