About HardCor Nutrition

Hi, I'm Cori! I am a Registered Dietitian who thrives off an active lifestyle. I enjoy running, backpacking, hiking, rock climbing and skiing. After spending countless hours on the trails with friends or meeting training partners for 5:00 am workouts, I’ve received numerous questions regarding nutrition throughout the years.

 

Regardless of where I am, once people find out that I’m a dietitian, the questions I typically receive go as follows:

·         How can I get enough protein if I’m vegan?

·         How can I help alleviate my GI stress?

·         How can I prevent myself from bonking at a race?

·         How much should I eat during a long trail run?

·         How can I properly hydrate to prevent cramping during a marathon?

 

Endurance athletes make up some of the strongest people I know, however, more often than not, they’re also incredibly under-fueled. Whether a runner is struggling with body dysmorphia or a climber is lacking the protein they need to recover after a hard session, I’ve come to learn through personal and professional experience that good nutrition is key to optimal athletic performance.

HardCor Nutrition was created because I love endurance sports and nutrition, and I want to help others discover their true athletic potential. With knowledge specialized in performance nutrition and a strong clinical background, you can count on me to help you fuel your next “hardCor” adventure.

My Journey 

Sports have always played a big role in my life. During my undergraduate career at Rochester Institute of Technology in New York, I played collegiate lacrosse and took up running recreationally. Fascinated by the direct correlation between nutrition and athletic performance, I decided to pursue a career in nutrition and earned a bachelor’s degree in Nutrition Management in 2014.

 

Soon after graduation, I moved to Fresno, California, where I completed my dietetic internship at California State University, Fresno. Through the program, I completed 1,200 hours of supervised practice in a variety of dietetic settings, and passed the national exam to earn my Registered Dietitian credential in 2016. Since then, I’ve worked with the Fresno State athletic department, and have worked at two different hospitals - one of which where I’m still employed.

 

Since becoming a resident of California’s Central Valley, my love for running has grown tremendously! Living just outside the Sierra Nevada mountain range is every outdoor enthusiast’s dream, and it was through outdoor exploration that I was inspired to run my first ultra-marathon in 2015. Since then, I’ve tackled numerous trail races and hikes throughout the state, and have even backpacked the John Muir trail, a 211-mile-long trek nestled in the vastness of the Sierra Nevada mountain range.

 

All of those accolades, however, would not be possible without adequate nutritional support. When I’m not on the trails, you can find me in my kitchen where I’m creating nourishing recipes, baking plant-based desserts or indulging in an occasional glass of red wine with dark chocolate. 😉

My Nutrition Philosophy

Food is fuel, and while nutrition is the driving force behind peak athletic performance, I believe that everything can be enjoyed in moderation! Learning the ways your diet impacts your life is the first step to establishing a healthy relationship with food, and when you work with me, I'll help you learn the tools necessary to fuel, and embrace, all of the adventures that life has to offer.
