Several people have asked me what I do to replace regular cheese. Well, here it is. Cashew cheese is one my staple items that I typically always have on hands. With only 5 ingredients made in just minutes. It can be stored in the refrigerator for later use as well. I add my cashew cheese to grain bowls, salads, tacos, stir fry, sweet potato fries and more! What gives it that cheesy taste? That would be the nutritional yeast. Nutritional yeast is high in vitamin B12, which is lacking in the vegan diet. The secret to get the cheese sauce to its consistency is to let the cashews soak in water for at least an hour. I personally buy the cashew pieces because it grinds up better. Salted cashews are preferred to give it more flavor. For athletes specifically, salt intake is important. Especially during a hard workout in the heat or for those salty sweaters out there.
