TOFU SCRAMBLE

It may look and have the same texture as eggs, but this scramble is completely plant based! The great thing about tofu is that it is cholesterol free and is high in protein and calcium. Some people fear the word "tofu", but seriously, give this recipe a chance! It is a great protein rich breakfast that you can pair with a slice of avocado toast or make into a breakfast sandwich, burrito or add some potatoes to it. If you are one that has transitioned to a plant-based diet but are still missing eggs, this is the perfect substitution. Add some spinach to the scramble to get a little extra iron in this breakfast. I mean really, you can add whatever veggies you like! For athletes that are trying to incorporate more plant-based protein into their meals, this is perfect to pair with a carbohydrate rich food.
