Light and refreshing for a perfect hot, summer day. This summer salad is perfect to pair with a favorite entree or can be made into a dinner salad. Top with a plant-based protein such as quinoa, edamame or grilled tofu. If not vegan, grilled salmon or chicken would be an excellent protein option. I just love a salad that bursts in color. The more color, the more nutrient dense! The nuts and avocado provide you with healthy fats, red bell pepper rich in vitamin C and fresh spinach is iron rich.
