These vegan pumpkin cookies are a BIG HIT!!!! They are the perfect fall treat and really, any other part of the year. No flour or eggs needed for this recipe. Just some good, wholesome ingredients and a lot of love! The pumpkin pie spice gives it that extra pumpkin-y flavor. Enjoy with a cup of coffee, as a snack, sweet treat or fuel during your long run! You must be thinking, why would I consume a cookie during my run?? Well, the simple sugars give your body that quick fuel source needed for you to keep chugging along during a long run or bike ride and they are the perfect size to put in your pack. Honestly, I would rather have a pumpkin cookie during my run than a gel because they taste WAY better! My dad actually requests these pumpkin cookies for any race or long hike he is doing. During our 50k race last year, these pumpkin cookies were one of his fuel sources and he loved it! He looked forward to eating them and provided him with a boost of energy to keep going!
