Where are all my hungry athletes out there?! These delicious vegan enchiladas are one of my go to dinners after a hard workout. Fill yourself up with this perfect balance of carbohydrates, protein and fats. Everything you need to refuel your body! Oh, and did I mention how freakin good they taste?! This dinner gets requested quite often whenever I am hosting a dinner with friends or family. And very rarely there are leftovers. This variation of enchiladas is not too spicy (only because I am a wimp for spicy foods), but feel free to add as much or little spice as you would like. You might ask, how can I make enchiladas without adding cheese?! Well, that is my secret ingredient- my homemade cashew cheese! This gives the enchiladas a twist on its flavor and texture that I am confident you will enjoy. Full of flavor and packed with healthy nutrients, you cannot go wrong with choosing this dinner as your post workout meal.
